When most people ask for a "Cab," they seek Cabernet Sauvignon. But not all Cabs are created equal. Despite being eclipsed in popularity by its Sauvignon offspring, this classic French varietal has been respectfully produced on its own by the Bundschus for almost 30 years. Once you've tasted it, you'll know to clarify "Franc" from "Sauv" next time you are ordering a "cab" (unless you're looking for a ride home after too much Gun Bun).

Striking aromas of violets, dark fruit and smoked vanilla lead into flavors of fig, black and blue berries and dark chocolate. An extended finish of solid acidity lingers with notes of graphite. This is a big, bold Cabernet Franc wtih powerful tannins integrated into a weighty, yet velvety texture. Drink now or enjoy that next bottle (or seven) over the next 12 years.

Vineyard NOTES

Estate grown, produced and bottled on Rhinefarm estate.

Our four acres of Cabernet Franc were planted in 2005 on a beautiful, secluded hillside at 100 feet elevation. With its southwestern exposure, considerable slope and rocky soils, this site is proving to be outstanding for this varietal. With Rhyolitic ash and alluvial wash soil, the vines must struggle to reach root depth, producing deeply colored, extracted but balanced wines. Yields 4.0 tons per acre.

Production NOTES

To make our Cabernet Franc, we hand-harvest in the cool morning hours, the fruit is destemmed and delivered to a stainless steel fermenter. We inoculate the must with a prepared yeast and it receives gentle pump-overs, using louvers and screens to eliminate pumping skins and seeds, until it is pressed out. The wine aged for 16 months in French oak barrels, 40% new.
